Educations
Dimitra Xenitopoulou is a researcher in Food Science with a strong interest in spectroscopy, sensing technologies, and data-driven analytical approaches. She holds an MSc in Food Science and Nutrition and an Integrated master’s degree in food science and technology from Aristotle University of Thessaloniki (AUTh), Greece. Her research lies at the intersection of food and agricultural sciences, spectroscopy, and data analysis, with a focus on rapid and non-destructive analytical methodologies. Through her involvement in EU-funded research projects, including Horizon Europe initiatives, she has worked with Near-Infrared (NIR) spectroscopy, MEMS-based photonic sensing systems, hyperspectral imaging, and machine learning approaches for the characterization of food systems.
Dimitra’s research interests include food quality and authenticity, detection of adulteration and non-compliances, estimation of physicochemical properties, and the integration of spectral and sensor-derived data with AI and machine learning. She is particularly interested in advancing the application of these approaches to food, soil, and agricultural systems, with an emphasis on developing practical, data-driven tools for reliable and sustainable assessment across agri-food systems.
